You can quickly write yourself a note, put your favourite emoji, or anything you can think of. You can create some pretty cool combinations if you use it and be creative. You can change the text/emojis from your Phone or from your Apple Watch.

Is it possible to have an animated complication? If so, I'm thinking the Siri animation in the centre complication window might look cool. Or a pacman animation.

No, so far apple says complications can not be animated.

I use a couple of different World Clocks as I have family all over the place and would have loved to be able to change the city/country abbreviation to a flag . 12.30 for instance instead of PAR for Paris .
