I don't want icloud and never did but I guess it's a fine thing if you want it. Mine is nearly full and I keep getting warnings about that, it spams up everything on my phone.

Is there an easy way of just disconnecting from it, leaving everything there or deleting it (I don't care) so I will be free of the warnings and everything? I have an SE phone.
 
Go to:

Settings>Your Name (top entry)>iCloud>Saved to iCloud>See All

and toggle what syncs to iCloud there.

Then…you'll probably need to log into iCloud on a computer web browser and delete everything up there that you don't want up there…so that you don't get any more warnings.

I have a suspicion that you'll be trading iCloud storage warning alerts for nag alerts to get you to turn it back on!

My options are: Remove from phone - Download photos and videos - or Cancel

I don't want to do either of those things. I want what's on my phone to stay there and I certainly don't want to download whatever is on iCloud back to my phone. As noted in my OP I want to disconnect from the cloud and whatever happens to my stuff there I don't care.

I want control of my phone back, I will save or delete whatever I like on my phone. If it gets full I will take care of that.
 
I went to Settings/Apple Account/iCloud/iCloud Backup and shut it off. But when I go to "Files" where I keep a lot of photos, images, documents, the cloud thing is still there and is still warning me that it's almost full.
 
If you're no longer syncing anything to iCloud you can go to the iCloud website and delete everything there if you want to.

Make sure you're not backing up the iPhone (iCloud Backup). You can go into those settings to see if there are any backups stored on the iPhone. If so, you can go into the backup details and "Turn off and Delete from iCloud".
