I've got a 2019 Mac Pro that will be getting the SSD zeroed out & a fresh OS install next week due to all kinds of performance issues (which we diagnosed & troubleshot with the help of some knowledgable folks from the Forums here). If the IT boffins at my workplace still can't get the performance issues sorted, they'll be ordering me a Studio. Need to determine how much RAM to get though.

I do music production: Logic Pro, Ableton Live, & post-production plugins & virtual instruments. We put 128GB of RAM in the Mac Pro, but I'm not sure what the "equivalent" would/should be on the silicon devices, not to mentioned the RAM tops out at 64GB on the M2 Max. I do feel like the Max should be suitable for my needs as I'm not going to be doing any intensive video work, but I could be wrong there. Thoughts/recommendations on Max vs. Ultra and amount of RAM accordingly?

If you select the 38 GPU cores into Max configuration, you can use up to 96GB of RAM. Prices shown in CAD dollars.
