I just bought a new iPad Air 2. It's all set up and working fine. I sold my old iPad mini and need to mail it. If I erase all content and settings on the old iPad mini, will that also erase everything on my new iPad Air 2 or on my iPhone 6? Or will it just erase everything on my old iPad mini? Thank you.
 
Yes, it will erase content and settings on your old iPad mini.

Follow the steps in this article.

You could also - if you want to be nice to the buyer - Do a restore to factory settings in iTunes. When it completes, it will ask you about setting up as a new user, or restoring from a backup. You can just unplug the iPad then, shut it off, and it would be ready for the new owner.

Why would erasing all content/resetting on an old iPad have any effect on other devices?
