I have iOS 7 GM on my phone, once it goes public next week will I have do a wipe and reload yet again?

no. GM stands for Golden Master and is likely to be the same as the public release. There is no expiry date on the GM either.

Most likely not unless they need to push a newer version for a critical bug

GM is the same thing the new phones are imaged with for day one release. Public release may have a different build number but generally they don't change. I think that only happened with iOS 4.

If you are using the beta, I didn't think the release of iOS 7 would be pushed to you OTA (over the air)? I think you have to install it via iTunes.

I am aware. I think you can jump from iOS 7 beta 6 to final release next week without installing GM, maybe someone can clarify this.
