So I have an OG Iphone X, which will not be able to run iOS17. I have a Series 7 Watch, which definitely will run WatchOS10. The problem seems to be that to do the WatchOS update, it wants to update your phone first. Since I can't update the phone, my Watch can't update. Is there a way to do an end run around the limit of having an old Iphone?

watchOS 10 requires iOS 17, has been the same way in the past, new watchOS requiring new iOS… sorry, that’s the way it is
 
I suppose you could use a family member's phone and do the family setup thing, but it would then be orphaned from your iPhone X.
 
Unfortunately watchOS is still pretty tied to the phone, so the phone has to be on iOS17 for the watch to load watchOS10 barring the less than ideal family setup workaround @Howard2k mentions.

You'd need to update the phone to an Xs or newer, though if you only go to an Xs you'll likely be in the same position this time next year.

 
The opposite should work right? (e.g. Apple Watch series 3 with iPhone 11: I can update iOS to 17 bit not watchOS but I can still connect my watch even if not updated)

If you had the cellular AW model, can it use cellular instead of WiFi/BT for the update ?

Improbable since it's still paired to the phone and the new watchOS likely depends on API's and such not present in the older iOS.

But give it a try and see if it works. I'm going to guess you just won't see an update available.

Yes, should be fine. Newer iOS should support older watchOS. There may be limits though, so this is a definite YMMV
