IMAP and mails app, do they save emails

so i had a little scare about a month ago. im on an IMAP mail server and the server crashed and when i went to look at my emails they were all gone. I have numerious folders and emails in those folders and they were all lost. luckily the admins were able to get the servers back up and restore all my emails. now that i have my new MB im using the mail app to check my emails and im wondering if the server ever went out again would all the emails that i have on my comp be lost again because its an IMAP account?

I believe that any emails you have downloaded will remain on your Mac. You can try a quick experiment by disconnecting from the internet and seeing if you can still read some of them. This is essentially what will happen if your server goes down.
