While I was out and about I used my AT&T service. I downloaded a couple apps, streamed some music, and surfed the net for about 2 hours and then on and off throughout the day. Total usage was 217MB.

I got home around 3pm, and didn't do anything with my phone. The usage from Wifi when I checked was 895MB the majority of that coming when it first connected to my wife while being gone most of the day.

What could the iPhone be doing/sending/receiving that is that large?

(It's not the update as I did that yesterday)

If I had to guess, lots of app updates the last couple of days... Did you plug it in thereby initiating an iCloud backup?

No it hasn't been plugged in or backed up yet. My App store update page doesn't show any for today just 5 from yesterday.
