I'm thinking about picking up a iphone but been holding off for the 3G version. Now my question is: If I buy an iphone now, will I be able to upgrade to do 3G via a software update or it does 3G using some sort of new chip=hardware?

It's a hardware issue. The current iphones do not have the chipset needed to use 3G. When a 3G iphone comes out you will have to buy a whole new phone to get it.
