Running 10.14.6 on a Macbook Pro 2018.

Delayed installing the supplemental update https://support.apple.com/kb/DL2015?locale=en_GB

and now I only have the option to install Catalina via Software Update.

If I download and manually install the supplemental update, will it still be signed?
 
I updated Mojave the other day. The Catalina option is first and larger, but underneath is a smaller option for Other Updates.

I'm not quite sure what you mean by signed. Unless they pull it down, you can still download it fine. macOS updates don't need to be signed to install like iOS.
 
If you go through System Preferences, click on the More Info under the Other updates are available.

They have to have an unexpired, valid, signature. That's why for Sierra, you have to set the clock backwards in order to install it.

Ah, good point. It's good that there is a workaround, unlike trying to downgrade iOS versions.
