iPod Its easy to delete movie file , but no other file .WHY

How do I delete a file on an ipod touch apart from the normal method of going through i tunes
eg Remove a photo or a music file, I no longer want if I don't connect to a computer.


Its easy to delete movie file , but no other file
WHY?
Is there some addtional software I can add to the ipod to delete
anything i want only using the ipod?
