I recently bought my first iPhone 4s and was looking to get the iTunes match service for my devices, now my question is about how much data will it use just to stream my music from the cloud versus downloading it, because i like to listen to my music in the car but i don't want to go over up my 2g data plan.

Since 2 GB is your limit, you'd be better off downloading the songs to the device over Wi-Fi. Of course you could always test it and see how much data you're using by streaming. I'd guess roughly 3-5 MB's per song. You can also turn off "Cellular Usage" from within the Music app so you don't go over.
