why would apple ship 3.5mm headphone jack earphones with a lightning port dongle included instead of a lightning port earphones with a lightning to 3.5mm dongle?

that way you wouldn't need to permanently use a dongle whilst using your iphone... is that too logical?

(deutsche bank and everythingapplepro confirmed that this is what apple were doing)

Cost perhaps.

Apple could also be trying to irritate its users into switching to Bluetooth headphones. Hence a stop-gap measure. Lightning headphones might just prove good enough that consumers are content to use them.

Apple is not always go logical. But you still will by the new iPhone ;)
That is actually incorrect. Apple is probably the most meticulous company on the planet right now. They do everything for a reason. Everything in Apple, at least, the customer faced bit is well planned and executed. So something that you may think is "illogical" must have a perfect reason for them and data to back their decision up.

Don't forget Apple is rumoured to be working on a pair of wireless Bragidash style EarPods, they even have a patent for the name. So the ones you get in the box, are not going to be the best just bog standard ones, Apple will then want to up see you too their wireless EarPods, they will probably be announced alongside the iPhone 7 in September, but we will see.

Well, Audio jack does not carry constant DC power, and I am pretty sure the electronics inside the lighting port will need constant power to run.

IOW, wont work.
