I plan on using this Mac Mini with only 512meg of RAM until the Warranty is up in a years time, but what I was wondering is if there is any large advantage in pairing the RAM sticks because I was just going to slap a 1gig stick in and leave a 256 one in as well, but if there is any large advanges ill buy 2 x 512 sticks.

there are no apparent advantages in performance other than the fact that you could upgrade the system with more RAM easier

Dual channel memory usage is meant to benefit the graphics card.

I have run my MacBook (essentially the same as your min) with 1GB + 256MB and 2 x 1GB. Noticed no graphics differences at all.

I'd say get a 1GB stick as this makes future upgrading better value.
