The difference you have already mentioned. Humanly. Ringing the neck would be a rather quick death. Where being speared and cut by razor sharp blades over and over again till you bleed out, doesn't sound to humanly does it?
Last time I checked, shooting an animal in hopes of a quick death is also a humanly thing to do. If you don't kill it in the first shot, once on scene with the animal a second shot to the head usually puts the animal out of it's misery.
On a farm you eat them all....no waste...

Last I checked, the farmer didn't put razors on the cow's hooves and put in into a death cage match with another cow while a bunch of backwards ass people watched and gambled on the outcome.

You could put all the blades you wanted on cow but you won't get
them to fight. Cocks on the other hand will kill each other without
the blades it just takes longer....
