If you would read a few posts and search the very least little bit, you would know where to find them. Links are floating around to download the filesystem from the iPhone, which contains the applications and files you need to get Mail.app installed on your iPod touch.

Spend some time over here. Poke around, don't just play dumb and expect someone to do the work for you.
