So standard for the late 2013 iMac 27" is 8GB. If I purchase additional (2x8GB - 16) from Crucial, can I add to the 8GB totaling 24GB, or would I need to remove the original 8GB and toss them to storage.

Should be fine. I did this with my 2012 iMac and worked great.
