They are paired in stereo and I can select them on my iMac or iOS devices but I can only select the 2 separately on my MacBook M1. Anyone seen this?
 
I've seen mentioned that mac's don't play well with paired HomePods, I believe the Mac is still using airplay-1, and you need 2 to stream to stereo.

that's all from before the Big Sur release, so it might have changed. but might give you a direction to explore
 
It’s normal. This has been requested for years since you could pair HomePods in stereo. You can stream to them as a stereo pair in iTunes/Apple Music app but not system wide like you can in iOS. There several annoying work around s but it’s not true stereo.

Exactly this, hopefully this will be rectified in a macOS release soon.

I doubt it. They enabled stereo pair & AirPlay 2 with HomePod software 11.4 way back on May 29th 2018.. It's existed in iOS ever since. Why would it take them 2.5+ years to bring such a simple feature to the Macintosh? I'm convinced that if it was going to happen, it would have happened by now. I'd love to be wrong though

It’s still buggy as hell on the beta the delay and lag means it’s airplay 1
