Picked up my new phone. In short the first Watch paired without an issue. The 2nd and 3rd had to be unpaired.
is iOS 18 capable of re-pairing multiple watches?

I have two watches paired on iOS 18. Ultra 2 and AW8. The 8 has been my only watch for the last 2 years, the Ultra 2 was new along with the phone. I didn't even need to unpair my 8, I just paired the Ultra 2 and transferred the eSIM to it, now they're both there and I've been switching between them without a problem.

Azhava as in Lake Havasu? I ahd 3 watches on my 15 promax. The first one re-paired seamlessly. each time I tried to pair the others it reverted back to re-pairing the first watch.
Ultimately, I had to unpair the other 2 and set them back up again.

I’m not that far, I really need to escape the valley and pop up there
 
At least is only going to be 107 in the valley this week
I love the heat. Been here for 6 summers now. Beats the heck of Boston summers. I will say anything over 110 can test ones patience. But it beats the crazy weather of Boston. I have a pool so that helps a lot.
