I have been using the notes function in microsoft outlook 2010 mac. The problem is the note function doesn't have an alert feature attached to it, like time and date of reminding me. When I first open outlook the notes tab at the bottom doesn't even have a star or number indicated how many notes I have or any notes I have which means I will have to remember I have notes in the note tab to look at all. Is their something I am missing, can an alert feature be attached to each note?

I don't believe you can attach an alert to a note. This isn't a limitation in the Mac version; the PC version doesn't allow this either. You'll need to use tasks to gain alerts.
