I have a 60 page PDF that I would like to convert to JPGs. I did this with a bunch of smaller PDFs by opening each one (in Preview) and saving each page as a JPG. I would like to know how to set up an Automator workflow to do this in one shot and save me the repetitive work of doing each page individually.

If you'd actually opened up Automator you would have seen that there's an action called 'Render PDF pages as images' Make a new Autmoator workflow with that action followed by 'Rename finder items' (as suggested in the notes section of the 'Render PDF pages to images' section.)
 
I DID open Automator and had set up a workflow like you described. The reason that it wasn't working is because the JPEGs are put into a temp folder, you need to either dig them out OR use the "Move Finder Items" action to move them someplace more convenient. (That's what I did.)
