Ok, this is doing my head in but I'm sure there is a simple explanation that I'm missing. In Apple Music in iOS11, how do you selected a song to 'Play Next' or 'Play Later' like you can in iTunes for Mac. Please tell me that feature is in there somewhere otherwise I'm moving to Spotify.

Not sure what the question is. Play next and player later work the same way they do in iOS 10. Either long press or 3D Touch the song and select play next on the menu, the song doesn’t need to be in the same playlist
 
You're not going crazy. They definitely changed the Play Next or Play Later features in the current betas. You used to be able to pick any song and just add it. Now it rarely shows up. Very strange. I hope they go back to the old way.
 
It must be some bug because I’ve had absolutely no issues with play next/play later since the first iOS 11 DB. Works perfectly fine on my iPad Pro and iPhone 7 Plus
 
It use to somehow dependent on how you picked the song. Searching allows a song to be next. While playlist wouldn’t. Now it seems like I can choose any song.
