Problems with current update

Hi guys, my watch refused to update, so I un paired it with the phone, restarted both phone and watch. Phone is now stuck on software up to date screen, leaving me to cancel as my only option out of that. The watch is not paired, I've been messing with this for a few days with no luck.
Watch is gen 5, phone 10max

Any suggestions?
