I am about to jailbreak my iPad and I had a question about restoring.

Basically say my iPad is setup and we call this current state X.

Now I jailbreak and use it but I later find that I want to back to X.

What is the best way to go back to X without starting the iPad from scratch factory settings, is it possible?
 
Plug the iPad into iTunes. Click the Restore device and once the iPad is done click the Restore from Backup. I think this is what your where looking for.

But what backup will it use? Will it give me a choice of a few dates when it backed up or what?

Wait. If I sync my pad after I jailbreak will it backup over my pre-jb backup?
 
It will restore to the backup of the last time you synced your iPad with iTunes.

Yes it will overwrite your previous pre-jailbreak backup.

So, if I want to be able to go back I can't ever sync my jail broken phone, correct?
 
You can sync it, just turn off the iTunes automatic backup. You can still go back to being unjailbroken, you'll just have to start over as a new device.
