Unlocked Replacement iPhone - Restore?

My iPhone, running with a T-Mobile SIM card, just got replaced. The new phone is unlocked and jailbroken and works fine with the SIM card in there (just as the last one did). How do I go about "restoring" my profile, and possibly saving my apps I paid for? If I restore from my last back up via iTunes, will it de-jailbreak it?
