First off..
Can I set a smart folder to search only a specific folder? When I'm editing it the only options it gives are the entire mac or my home folder. I want to just search in specific folders though! Some walkthroughs I've seen online suggest an 'other' option should be in the address but I certainly don't see one in Snow Leopard.. is that something I can add? seems like a strange thing to remove.
edit: answer found here. confusion regarding decision to remove that...

Second..
Can you put a smart folder on the dock? I don't see any way to do it.. it just gets trashed if I move it onto the dock..

Third.. what handy smart folders do you use?

in Snow Leopard you can set Spotlight to search the current folder in FInder's preferences.

to drag a Smart Folder to the Dock and make it a stack drag it from its folder which can be found when openning a get info window on it. (that was badly explained, sorry )

i just use the included Smart Folders. a useful one could be for date modified before a certain date for you projects.
