Pros: Use the interface, software and features you want.
Cons: Can no longer perform Apple updates to the unit. Unit may no longer be able to connect with updated iTunes or OS X (without Apple doing a reset).

Only if they decide to do what is called "validating the device" in iTunes itself, checking to see if the iPhone or iPod Touch have been "hacked".

The worse that can happen is that it updates the firmware to something that hasn't been hacked yet and takes it back to an "out-of-box" state.

Bad for iPhone users that have unlocked the device...

iPod Touch you may just have to purchase the apps if they become available for a price on the iTunes Store...
