I would like to find out approximately the wifi range of the Airport Express & the AirPort Extreme.

Hard to answer, as environment has a huge effect on the signal.

Perhaps someone, preferably on a farm with no overhead power lines nearby, can take theirs outside and measure it!

Yep. Way too many variables to quote a range on WiFi gear. Smallnetbuilder has thorough reviews (including the Extreme and Express) so you can at least see how they stack up against other devices in their test environment.
