Why do some photos state where the photo was taken (eg Home) and others don’t?

I don’t do anything different?

It’s one feature that I really like.

It depends if the iPhone is able to gather the GPS-position before you take the photo.
If so, the photo will contain the position, if not, it won't.

Is there anything I can do, to check that the location is locked in?

When i'm on vacation and want to ensure, the photos taken include the exact position, i first just shortly open the navigation app (in my case magic earth), to verify my position - eventually waiting for GPS-lock-in of the position.
