Why is it that Verizon will let me have UNLIMITED Minutes, UNLIMITED Texts, but not unlimited data? Why are they aggressively targeting people who have unlimited data into getting rid of it? Years ago, they gave away unlimited data, but the minutes and texts were limited, why don't they want anyone having it?

There are a whole lot more smartphone users using data now than they did years ago so it puts strain on their towers and they make more money.

I think you know the answer. They obviously can make more money if they don't sell unlimited plans.

Because they are far cheaper and don't clog up their bandwidth.
