On welovemacs.com when you are looking at the ram for a 266 G3 beige DT it lists two 256mb chips, and one says if you have a non apple processor, use the other ram...can someone explain it to me?

It means that if you have an aftermarket CPU upgrade installed (so that your machine has a faster chip than the original), you should use the faster (more expensive) RAM.

I know that you should, but is it necessary? Would the old ram even run the machine if I upgraded the CPU?

You would have to check the specifications for the upgrade kit.

The bus speed doesn't change, so you can use the older RAM, although it might be a millisecond or so slower...

The system bus can be overclocked on both beige and B&W G3 boards.
