I'm getting my mac Wednesday and I was planning on using my iPod touch for senuti, but senuti doesn't support os 3.0 yet.

In short, can I dowgrade to 2.2.1, use senuti, then re-upgrade to os 3.0?

The 3.0 firmware will stay on your computer, so you're fine.
