I'm looking for some good board games to play with a group of 4-5 people (total)... does anyone have any favorite recommendations? The age group is 21-23 years old. (That doesn't mean it has to be an adult-rated game... just letting you know).
Nothing fancy - just a good, quality game that is enjoyable.

I love Monopoly. By far best board game ever. I like ruining people financially, blackmailing them for their property, and owning everything! Whats that? 1000$ to stay on my property for a turn? Hand me them bills!

That is a good one... though a pretty large time investment.

Its a very long game, but IMHO its a lot of fun. Its even more if you've been drinking. ;)

Monopoly & Risk. Both of which are unbelievably long, so no one ever whats to play them.:(

+1. I've played for years and have never become bored. It's great because it changes every time you play.
Puerto Rico is also really fun, more intense than Catan, but a good 'upgrade' from it.

Yesyesyes. I'm going to MAKE my family play it with me when I go back to the UK for Christmas.
The iPhone version's not half bad, doesn't run for hours and hours but it's fun enough :)

Rat Race. I love that game.
Monopoly is fun, but Monopoly is boring until all the properties are gone.
Chess. Does that count? Chess is wonderful.
I like Clue too; I very seldom lose, but all you do is march around the board while everyone guesses until they get it, and then they're all like "Oooh! You have Col. Mustard!" (if you track what each player guesses on your little sheet you'd be surprised how much you can figure out).

Settlers of Catan as others have said.
I've only played Puerto Rico a couple times. It seemed fun.
Ticket to Ride also is dash fun.

well the age group 21-23 in college would mostly like beer pong....
but the occasional candy-land shall do....:p

Good serious games for ≈ 4-5 people (imho) is

Puerto rico is also a good game link @ boardgamegeek (http://www.boardgamegeek.com/boardgame/3076)
Acquire is good link @ boardgamegeek (http://www.boardgamegeek.com/boardgame/5) (although it's more randomized and requires more memorization of opponents assets than the other games)
You could also consider good card game based such as Race for the Galaxy, but you specified board games - so maybe not :)
Axis and allies is also a great (although consuming) game, preferably for 2 players but can be played 5-6 (depending on which axis and allies) as well.

If you are going to have four people then that is ideal for all kinds of partner card games like Rook (my personal favorite), Spades, Hearts, etc. You can always go old school with Uno. I'm showing the color of my neck here, but Mississippi Rummy is fun also. You'll need two decks of regular cards for that one.
For interactive board games try Apples to Apples or Mad Gab. You may need a few more people to really make these games fun though as the more the better is usually the case with party games.
If you're triva people then you can always go Trivial Pursuit.
Most of the classics have already been mentioned but don't forget Parcheesi, Scrabble, and Rummikub.

For a quick game I like some Candy Land and Chutes & Ladders.
For a slower game, I'll take RISK any day. Haven't played it since my high school geography class had a weeklong RISK Tournament 4 years ago. Nobody to play with.

A few years back my mother in law gave me a game for Christmas. It's called
"Conjecture". I had never heard of this game, but, I must say, when we first played it, I've never had so many laughs playing a game. Basically, it's like
"Pictionary" with Play Dough. So, instead of drawing the word in question, you sculpt it with the Play Dough. I was very surprised how fun this game was, and highly recommend it. After a few cocktails and people start to loosen up, the sculptures can get hilarious.

Our favorites:
Monopoly. My 23yo son is the family champ at this. Kid's got a calculator in his skull (and then he made a custom spreadsheet for his properties!)
Scrabble. I do pretty well, usually, although the 11yo skunked me and the Mrs. last time
Trivial Pursuit. Another fave of mine
