This is a potential workaround: http://hints.macworld.com/article.php?story=20100719201209193 You can hide icons without jailbreaking but still access them through Spotlight. Not perfect but if you just want to prevent people from casually scrolling through your email, contacts, whatever it might be a deterrent.
