I just purchased a MBP off a friend, who also has 1 year AppleCare warranty (she purchased it 2 months ago). Will I be able to use their AppleCare?

No. AppleCare is for original owner. I've talked to apple about this regarding an iPad...new owner cannot claim an applecare repair if he was not the one who purchased it

Wow, is there a verification process that goes on before the repair? Has anyone gotten repairs from a used MBP? I have the receipt of purchase (it was online).

That's inaccurate. Either you were told incorrectly, or you misunderstood

There's a formal process where you have to fill out this AppleCare transfer form (you can find it on the link that someone above posted), but in practice, they just check the device and don't really care who you are lol

True, and I've done that when selling my MBPs but I think as you mentioned in practice its tied to the machine regardless of the user.

I think you meant you talked to a retail sales person who didn't know what they were talking about.
