Which one is better?
Which configuration of the late 27" iMac, out of the following two options, will better suit heavy gaming and video editing:
1.) 3.4GHz Quad Core i7 - 8GB Ram - GTX 675MX 1GB - 3TB Fusion drive 2.) 3.2GHz Quad Core i5 - 32GB Ram - GTX 680MX 2GB - 3TB Fusion drive

and don't buy your RAM from Apple. That will save you buckets! Try Crucial and why are you asking if you already have the 27" in your siggy? :-P

To me 8 seems too low and 32 seems over kill - not sure. If I have to choose it'd be #2 and I echo oililymad's comment in that you can save some money by upgrading the ram yourself though I understand the appeal of having apple do it and being part of the overall warranty

I would order what is highlighted in bold and upgrade the ram from 8gb to 32gb yourself. Apple charges way to much for ram.

why does he/she need hyperthreading for the stated intended uses?

Both stated uses would make use of hyperthreading in a lot of cases....whether they need them or not is a personal choice.

True... I already own the top of the line configuration which is blazing fast. I ask for a friend, not for myself, because I have no way to compare the two options. What my friend was actually asking was, whether the 3.2 i5 option will be so much slower than the 3.4 i7 option?

There is only one option:
3.2GHz Quad Core i5 - 32GB Ram - GTX 680MX 2GB - 3TB Fusion drive Check the difference between i5 3.2Ghz and the i7... |

I would want the imac to last as long as possible especially spending that kind of money. 200 dollars is not much when you are already spending 2500. |
