Why won't "File Sharing" stay on?

You might find something in the logs that could help. Open Terminal and type:
tail -100 /var/log/system.log
You can change the number 100 to anything you like or omit it altogether. It just gives you the last 100 lines.
You could also:
more /var/log/system.log
and hit the space bar to page through it looking for errors.
Without something to go on, it's hard to find the problem.
