Can you upgrade a Mac?

If I purchase a 2010 Macbook Pro w/ Applecare and in 2011 a new Macbook Pro is released, can I upgrade my old Mac for the new one and pay the difference at an Apple Retail Store? (Or does Apple not offer that?)
