Why oh why does Apple not allow people to add/remove/edit the radio window on iTunes?

If I listen to a radio-stream from a radio station that does not come pre-loaded then the stream appears in the normal "music" tab with its own non-existant album folder etc.

Is it just me who finds this ridiculous? Is there a way to edit the radio tab?

You can make a smart playlist with the rule Kind contains stream. This doesn't add anything to the built-in iTunes listing, but at least it puts all your custom stations in one spot.
