In Solaris it's possible to bind processes to specific processors using 'psrset'. Is something similar posible in OS X on a Mac Pro?

I was wondering if when using SMP with VMware Fusion it might be benefitial to bind the VM processes to both cores of one CPU and force everything else to the remaining pair. Not sure if this would generate an improvement or not but I'd like to give it a try.

Any ideas?

It might well be in there. Apple have improved the kernel in every major OSX release as well as improving the Unix layer every time. The made quite a big thing of their improved internal threading and the like at last years WWDC (see the OSX State of the Union video) so additional thread-level control may be coming...
