You can use any charger you prefer. Devices talk to chargers these days and they agree to the highest charging rate, both are supporting.
Proprietary stuff like „hyper charge“ or IQ charge or you name em do not work on iPhone so they will agree to some charging speed both sides are capable of.

You could even use the charger that came with the original first iPhone for your 15 (with an USB-A to C cable of course).

I've used my USB-C power on both an Lenovo and MB Air to charge my backup phone and my iPad. If my iPhone supported USB-C, I would use it on that too. Charges faster.

Yes. The phone itself has the charging circuitry and it will safely use the most current that is available.
