I played with hosting emails for my domains on the OS X server and had a few little snags... I tried it on a linux server with huge snags (never got it running) then started looking for paid hosts for email, then remembered that Google can host emails for your domain (and its free in beta) what a cool service, you can set it up in minutes, google.com/a I think is the link... check it out and enjoy. you can read a little more on it on my site.

I have that service. Google gives 2 GBs for each account, a Google Talk server and calendar service. Fast and easy to set up.

Also, if you registered your domain at GoDaddy, they will give you free emails. I have not used that service with them yet...
