Is the iPod disk formatted as Windows or Mac?

Well that's your problem ain't it. Use Disk Copy (/Applications/Utilities/) and format the iPod as a Mac drive then run the iPod app which is in /Appz/Utilities (from memory) and choose to erase it completely and start over, whatever the wording is.

On a loosely related note, I reformatted my iMac yesterday and noticed that you can format the drive as MSDos. I never noticed that before :) hmmm
