because i am getting a touch, i would like to jailbreak my ipod to run the iphone apps, BUT as i do not have an iphone to 'borrow' apps from where can i download apps such as maps and weather?

At the moment no, but as sure as day is day when the touch nears release or starts shipping folks will upload the apps.
