If you can use Plex with a regular mouse... then of course.

You pretty much navigate Plex with the arrow keys, so the Magic Trackpad is probably not ideal.

I use the magic trackpad with Plex sometimes.
I mapped the arrow keys for plex with jitouch.
One-Fix, Right-Tap for the right arrow key, for advancing the movie etc.
three finger tap for pause. Drawing an M for the menu, C for escape.
The hard thing is to find the most intuitive function-gesture pairing.
