I have currently ordered an 8GB iPod touch but I am worried it might not be enough space for me. I have about 2.6GB of music and probably want to put a few simpsons episodes on it, maybe 1-2 movies. Do you think it will be enough?

    Probably.

Definitely if the videos are formatted for the iPhone's native screen resolution.

You should be alright. You'll probably have an extra 1GB on top of all of that so that you can add a bit more in the future. As for the videos, it might be good to swap them out every once and a while so that the content stays semi-fresh. I don't know about you, but I don't want to be watching Homer Simpson talk about donuts and peanuts in a single episode over and over again.
