I created a video showing performance of switching in and out of full screen in Aperture in Snow Leopard and in Lion. It shows that it is virtually instantaneous in Snow Leopard and quite sluggish in Lion. This is using my 2.8 GHz i7 iMac.

well then there is a problem with your system because I run a 2.26 processor with a 9400m and it is seamless even when a bunch of programs are running.

Video is 8 frames per second, so looks jerky. Its the speed of switching into and out of full screen I'm complaining about (compared to Snow Leopard). It's being slowed down by fancy animation (not in Snow Leopard) that cannot be disabled.
