I'll be selling my iPhone on ebay and using another phone for a while. I was planning on removing the iPhone SIM and use it on my temporary phone. Will it hurt resale value, if I do not include a SIM? Is an iPhone SIM easy to replace should someone want to activate it to a locked contract?

I plan on unlocking it anyway prior to sale.

If you are unlocking it anyway then there is no reason.

That sim chip could act as a portal to your personal data.
 
i wouldn't sell with the SIM. remove the SIM and the buyer of the phone will have to install their own. They can buy a new SIM from the carrier.
