Unless you have completely filled your iPhone, it is all in your head.
You're imagining things...
If you use apps like FaceBook and Intagram, the store a lot of caches on the phone after a while and it tends to slow things down. Download Battery Doctor and run the junk clean up. Might have to run it 2 times for it to actually work (There is a iOS 8 bug in the app). Could save you hundreds of MB. I run it about once a week, save 400-500MB at a time. Also helps keep the "other" space in iTunes in check.
I'm pretty sure it's not "all in my head", I wouldn't just imagine a large change in speed.
I have an iPhone 6 and it's just as fast as the day I got it. I use over 100 apps, including Facebook, Twitter, banking apps Etc and there has been no slow down whatsoever. Is your storage almost full?
Sure, just like all of the other inane "problems" you find with your phones, iOS, and whatever.

All of my criticisms and problems with the iPhone and iOS are not "inane", in fact most of them have multiple posters who share the same frustrations/issues.

You are the minority, even here. The vast majority of the general user base of Apple products will never visit MacRumors, and never complain about these little things that you and a few others seem to find.
Put your phone into DFU mode and use iTunes and install a fresh copy of iOS 8.0.2. DO NOT RESTORE FROM YOUR BACKUP. You can, however, install whatever apps you need. Use it for a couple weeks and see if it still slows down. If it does, then it's all in your head.

Your contacts and bookmarks are synced through iCloud. I'm not sure how you have your camera backed up and I've never used PhotoStream, so if you're using that it may allow you to "restore" your photos.
I believe you will lose other app related data. Did you restore from a backup of a jailbroken phone when you setup your iPhone 6?

So I will apologize. This issue isn't in your head(although that doesn't change my opinion on some of the other "problems" you've had). How's that for a back handed apology?
Anyway, it sound like you may have caused a problem by restoring a backup from a jail broken device. This is actually one of the main reasons I stopped jailbreaking.
Maybe your expectations are just unrealistic and it's time for you to move on to something else.
