Much to my surprise it didn't seem to install on my system!... Still running 8.0.2.

Can anyone confirm? :rolleyes:
 
iTunes updates are delivered separately from OS X updates, 10.5.7 (combo) does not contain iTunes 8.1.1.

Just like it doesn't contain iMovie, Pages, Keynote et al. updates
 
Ahh okay. Before I reinstalled OS X today I had previously updated to 5.7 via SU and could have sworn it installed 8.1.1. Eh, must've been smokin' it at the time.

Apple doesn't usually stack iTunes updates with system updates. That's not to say they may not appear on the same day/same week, but they would appear as two separate items in the Software Update window. Any chance you ignored the iTunes update at some point in the past? Go to the Software Update menu in the upper left, then click on the 3rd option for "Reset Ignored Updates." Let it communicate with the update server again and see if it pulls down.
